Any advice for daily cleaning of my griddle?

You should keep a few things in mind when cleaning your griddle on a daily basis: scraping the griddle, removing and cleaning grease, and cleaning the surface of the griddle.  

Every single time you finish cooking an item on the griddle, your employees should scrape the griddle surface clean to prevent accumulated buildup of particulate matter.  At the end of the day, your employees should empty the grease container and clean the grease trough.  Then, have your employees clean the surface of the griddle (they can use a tool such as a griddle brick) while it's warm, but not while it's hot (warmth loosens particulate matter and makes it easier to clean).  If you like, you can further clean the griddle with a wet squeegee.
