Any reason not to go with a plastic handle over a wood handled knife?

Plastic and composite knife handles are quite popular, and for most chefs, they should be sufficient for their needs. There are two reasons you may want to go with a wood handle over a plastic handle, however: 1) plastic handles crack more easily, even with proper maintenance; and 2) plastic handles often have worse grip, and especially so when they become wet. This need not lead you to a wood handle, however. Plastic handles are less prone to bacterial contamination, and to avoid issue #2, consider a "gripped" plastic handle. You should speak with your supplier to determine whether a gripped handle is available for your knife of choice.
