The first culprit is overpouring, of course.  Invest in some tools for precisely measuring out how much your bartenders are pouring.  This will save you a great deal of money over time.  In addition, consider purchasing liquor glasses that have a thicker base.  The glass fills up quicker while appearing to be as large as a typical glass its size, thus minimizing the liquor pour.
