Using dry yeast or liquid yeast is generally based upon the brewmaster's preference. Typically, people used to consider dry yeast to be inferior in quality to liquid yeast, although most brewmasters agree that this is no longer the case. Dry yeast can be just as strain pure and sterile as liquid yeast. The major differences are that dry yeast can generally be stored for longer periods of time and is less sensitive to the temperature/conditions of storage. Liquid yeast tends to have shorter shelf life, but is available in many more varieties/strains than dry yeast.
