As a casual pizzeria with a focus on authentic, cared-for pizza, is a pizza deck oven a reasonable buy, or is a brick oven seen as necessary?

Pizza deck ovens have been around for many years and have been great "authentic" pizza for just as long. There are many options in this equipment line that will allow you to find the right oven to produce the product that you want. There are even pizza deck ovens that can produce that "brick oven" pizza. To discuss further message me through Kinnek or send an email to Mike at [email address] ([phone number])

A pizza deck oven is certainly a reasonable buy. They are cheaper, easier to use, and easier to maintain than brick ovens, but they also provide authentic-tasting pizza. Depending on your budget, space, and other costs, a brick oven may not be a smart buy. In such cases, a pizza deck oven is often the best secondary choice. Brick ovens are nice, of course, but they are not 'necessary' unless you are specifically trying to market your pizzeria as a 'brick oven pizzeria.'
