The brewery I work at recently purchased a centrifuge, and since no one here seems to have any experience operating this type of system, my question is this: What is the proper CIP procedure with a centrifuge?

At the very least, run caustic for 30 minutes on a loop, followed by a hot water flush after each beer run. Certain parts of the machine will never get clean unless you disassemble the centrifuge every couple of months. Doing so will also help you to verify all the seals and gaskets are working properly, as well. Those parts can get worn down and even break if they're not checked on a semi-regular basis.
