Can I just add starch to what I need to thicken?

Care must be taken when handling any thickening agents, such as starch. You should only add starch to thicken after you dilute the starch, first. If you don't dilute the starch first, then it will cause your food items to become lumpy with starch. Also, be careful not to cook the starch at an excessively high temperature (or for an excessively long period of time), as this can minimize the thickening power of the starch and cause the item to develop an odd, starchy flavor.
