Can I setup a food truck and remain hands-off?

You absolutely can, but it really depends on your food truck.  If you're selling barebones hot dogs and other items that are not intended to set the culinary world on fire, then you'll probably be able to setup a food truck with minimal supervision.  On the other hand, if you're intending to sell higher-quality dishes, then you may be surprised by the quality/efficiency drop of having others handle the business.  Lots of food truck owners are shocked by how much hands-on time was necessary.  Also, in the beginning, labor costs may be too high to replace yourself with others.  Just be wary: it is better to expect some hands-on time (and slowly shift the business away to a hands-off setup), than to expect a hands-off structure.
