You "can" but you probably shouldn't. Be careful not to use your Chinese cleaver for full-on butchering. The name is a bit misleading -- Chinese cleavers are not structural equivalents to western style cleavers, and cannot handle full-on butchering needs. The shape of the Chinese cleaver is actually meant to provide benefits for chopping and mincing more easily (due to the easy rocking motion). If you need a knife to cut through bone, purchase a real cleaver that is thicker and harder and designed to handle butchering.
