Yes, you can! maple sugar makes a fine substitute for granulated sugar in baked goods, but keep in mind that maple sugar is much sweeter, so you'll have to use less.  Also, maple sugar has a quite subtle but unique character.  You'll want to consider whether this suits your baked goods or not.
