I'm looking to scale up my kombucha production and move from carbonating in kegs to carbonating in brite tanks. If my batches are usually around 3bbl, can I carbonate them in a 5bbl or 7bbl brite tank?

Do to the short amount of time that you'll have the kombucha in the tank you should be fine carbonating a 3bbl batch in a larger bright tank, if you carbonate using a carb stone and a vacuum/ pressure relief valve. You'll use a lot more CO2 because of the extra headspace though.
