Yes, generally you do. Most commercial dishwashers have short dish cycles, which means that pre-rinsing may not be sufficient if you just stuff dirty dishes straight into the dishwasher. Successful kitchens set up a process where a dish washer manually sprays and pre-rinses the dishware before it goes into the machine, to ensure that no stuck-on particles remain after the cycle is finished.
