Do I need to purchase separate photometers for the analysis of iron, copper, and phenols in my wine, or will any photometer be able to detect all of them?

You do not need to purchase separate photometers for the analysis of iron, copper, and phenols in your wine.  Some companies sell separate photometers that are calibrated for these, but many wineries simply make use of a more advanced spectrophotometer that can be self-calibrated for determination of iron, copper, phenols, and tannin levels in the wine.  Using a spectrophotometer, you will have to make use of specific reagents for each test.  This will require some research on your part, but spectrophotometers are generally a better long-term investment for a growing winery.
