It depends on whether you have a chromium or non-chromium surface.

If you have a non-chromium surface, you should try not to use soap and water, as many food service operators find that the use of soap to clean the griddle negatively influences the flavor of their food.  Instead, it's recommended to clean the griddle with a non-abrasive degreaser (check with your supplier/manufacturer, or consult your manual, to determine compatible degreasers).

If you have a chromium surface, however, you can clean using a mixture of mild soap and water.
