Do my customer facing people need to wear gloves when picking up wrapped pastry items?

In general, yes, you should have your employees wear gloves (disposable is fine, of course) when they are handling prepared food, such as pastry items. Local health codes may not forbid touching a wrapped item, so you will have to confirm this rule based on your local codes. Generally, however, though the pastry item may be wrapped, some pastry items may only be partially wrapped (muffins, for example) and thus your ungloved employee risks touching the prepared food with their hands directly. Even if doing so is not a code violation in your jurisdiction, it is good practice to encourage glove-wearing as your customers will notice if you are allowing unhygienic practices in your bakery.
