This depends on the laws of your state (in addition to federal regulation, such as OSHA rules), so make sure to consult with a qualified attorney for further details.  You should -- as a matter of good safety policy, however -- provide safety equipment for fryer workers.  Use high-quality oil to prevent splashing, provide visors and gloves, and keep first aid handy.
