Is a dough roller worthwhile for my bakery? We have only two employees so far.

It really depends on your baked goods output.  Dough rollers are great, but they're primarily useful as labor-saving machines.  If your employees are overburdened by the current workflow and efficiency improvements would lead to either cost savings or improvements in other aspects of the business (customer service, better quality goods) then it is definitely worthwhile to consider a dough roller purchase.  The dough roller guarantees consistent, well-shaped loaves, rolls, and crusts.  To a certain degree, using a dough roller can also save you a small amount every day in materials, as your employees will not accidentally waste dough.
