For an entry level type fryer, should I go gas or electric?

If you're in the market for an entry-level fryer, you're probably somewhat cost sensitive.  Keeping that in mind, you should know that gas fryers tend to be initially cheaper than equivalent electric fryers (though the setup/installation cost for a gas fryer may be somewhat higher), and the cost of running a gas fryer may be less too, depending on the price of propane/gas in your area.  

As far as quality of the fryer goes, there are pros and cons to gas and electric.  Gas fryers heat up faster and to a higher temperature, but electric fryers gain the advantages of not having to be hooked up to gas and retaining heat better.  Thus, aside from the cost issue, your choice will really be down to preference.
