Whether a grooved griddle plate is 'worth it' completely depends on your expected use. Grooved griddle plates are primarily a quality-of-life improvement for certain kitchens. The in-built grooves allow for a nice visual sear (branding marks) on items cooked on the griddle plate, which might not otherwise be possible without accessories or separate equipment. This makes a grooved griddle plate an excellent choice if you're space limited (say, if you own a food truck) and if the items you're primarily serving will benefit from the grooves. Do keep in mind that if you purchase a grooved griddle, you should use specific cleaning equipment to remove gunk from the plate (such as a bristle brush, or custom scrapers).
