For a growing, relatively high volume restaurant, what type of dishwasher should we invest in?

If you are relatively high volume already (and, like you said, are going to be growing in the future) then you should be looking at either door-type dishwashers or conveyor dishwashers.  These are high volume machines, though conveyor dishwashers can handle more dishes per hour than door-type dishwashers.  Obviously, higher capacity usually takes up more space, so that should be a consideration when deciding between the two, and costs will in most cases be higher for conveyor dishwashers.
