First off, you should try to purchase a must pump that gently transfers your wine mixture. Gentle transfer prevents shearing of the solids that could result in bitter, unwanted flavors. If you've already purchased a must pump and are interested in how to minimize damage, try lowering the flow rate. Lowering the flow rate makes transfer more gentle and also limits oxygenation. In general, damage is more likely when using the must pump to push a wine mixture (solids + liquid) as opposed to pure fluid transfer into barrels, for example. Be observant and try to keep the transfers as gentle as possible and try to be precise about oxygenation.

People ask us a lot about product shearing and product damage inside the pump...a key factor many forget is that shearing or product damage can occur throughout your hoses and piping system. The key contributors to shear damage is pressure and velocity. Lower system pressure, lower velocity; lower product damage---what is the easiest way to lower system pressure and velocity? Use larger diameter hoses or tubing. A larger hose or tubing will lower pressure and reduce velocity.
