The factors that will ultimately affect your calculations for your brewery are the size and number of vessels in your brewpub. In addition, the size and number of fermenters and bright tanks you plan on having, plus the amount of batches you estimate you'll be doing each week will also play a significant role in your calculations, as well. 

Start off by calculating the amount of barrels of beer you plan on producing each year. Multiply that number by 2.16 square feet, which will give you the number of feet per barrel you'll need for your space. Some brewers estimate needing less - as little as 1.5 square feet per barrel. That being said, if you have your eye on a particular facility, you can also do those calculations in reverse in order to figure out how many barrels of production your prospective space will be able to support.
