There are several methods, but one common method is to simply add tannin after the wine has cleared and is no longer forming sediments. Sample the wine and if inadequate, add a small amount of tannin (a fraction of a teaspoon per gallon), then stir and close the airlock. Let it sit for an hour or two, then sample again. Keep repeating until you get the desired tannin flavor.
