This is likely just the natural process of seasoning the steel.  As you cook with your unit, and use oils and grease on the steel, some of the oils will bond to the steel and darken it somewhat.  This is actually beneficial, as it prevents rust, turns the steel non-stick (hence the popularity of cast-irons pans), and can even add flavor your cooking.  

You will want to keep the surfaces clean, and free from build-up, of course, but I would not advise that you endeavor to keep the steel surfaces shiny, as this would remove your steel's seasoning.
