"Seasoning" is a fairly simple process.  By seasoning your griddle surface, all you're really doing is recreating a non-stick surface for the griddle.

First, make sure the griddle surface is clean.  Then, preheat your griddle to about 400 degrees Fahrenheit and coat the surface with a light layer of "seasoning" product -- whether oil, lard, baking soda, pan spray, etc.  Let the product warm on the surface for a few minutes, then turn off the griddle and wipe off the excess product.  If the surface doesn't look shiny and non-stick enough to you, repeat the process over again until you are satisfied.
