How does one go about designing a septic system for a smaller-scale brewery? Is it possible to run say, a 10bbl brewery with a sewage system to accommodate all the brewery's wastewater? If so, are holding tanks necessary?

With adequate knowledge, designing a septic system for a smaller-sized brewery is definitely possible. Some counties may require either using an engineer to develop your system, or at least approving your design before you can begin building it. First and foremost, it's important to monitor all items that go down the drain to prevent straining the system. Aim to prevent yeast from going down the drain if possible, and dispose of it separately (try finding local gardeners or farmers who may be interested in composting it). Be conscious of your acid and alkali cleaners and don't use chlorine; peracetic works best. Although your septic drain field can be the same as one of a normal system, you'll need several more septic tanks (enough to cover a timespan of 3-5 days in a residential system).
