How should I best balance the acidity of my cider?

Generally, for total acid content, you'll want to be between .3% and .7%.  Balancing acid content can be a difficult science, however.  Using titration, you'll want to measure your acidity.  If the acid levels are too low, then your cider fermentation may be vulnerable to bacteria.  If the acid levels are too high, however, the cider product will end up incredibly sharp tasting. Balancing the acidity is an art, more than anything, and requires some experience mixed with proper titration.
