How should I store wine in my restaurant? We don’t have a cellar.

You can use a wine cooler, or wine refrigerator.  Wine racks are a great, cheap option for some restaurants with proper cellars, but you don't have a wine cellar, so a wine rack is not going to work.  When storing wine, make sure to store below seventy degrees Fahrenheit.  Red wine is typically stored at a higher temperature than white wine, though light bodied reds can be stored at around fifty to fifty-five degrees Fahrenheit.  Some white wines can be stored at as low as forty degree Fahrenheit.  If you don't have the space/capacity and are storing white and red wines together, then a good rule of thumb is fifty to fifty-five degrees Fahrenheit.  Remember, storing wine at a temperature that is too high can prematurely age your wine, and overly low temperatures can also remove a great deal of flavor from the wine.
