I don't hear of many brewmasters opting for indirect fire for their brewing systems. Why is that?

Indirect Fire is typically used for a conical brewhouse kettle (or at least that is my experience). Not many breweries use a conical brewhouse kettle but they work really well if you use hop pellets. I think conical brewhouse kettles are newer to the industry in general due to these high hopped (pellet) beers. Most big brewhouses are designed for lagers and are either direct fire or steam jacketed.
