I have a 3BBL system, which I'm thinking about carbing. Would carbonating stone in the bright tank be the best way to go?

It depends on the method of carbonation you're thinking of using. Do you want to "set it and forget it," or would you rather go the recirculating carbonation route? If you'd prefer to use the first method, having a carbonation stone in the bright tank is definitely the way to go. You set the pressure for the desired volume of CO2, and literally walk away/forget it! In a bright tank, this process will take about 24 hours. Recirculating the beer involves pumping it in a loop with the carb stone involved. In general, recirculating can be accomplished in about 1.5 hours, but will require you to keep a closer eye on things throughout the process.
