I have a product to be pasteurized with a shelf life of at least 9 months and need an ultra-pasteurizer to accomplish that. Can an HTST pasteurizer, which takes slightly longer to pasteurize and cool the product, still allow the product to have a 9-month shelf life?

You will need an UHT (Ultra High Temperature) to achieve a 9 month shelve life. UHT pasteurization pasteurizes the milk at 275 F for 2 seconds, this allows for products like creamers that can sit on tables in cafes to sit longer if not used. HTST (High temperature Short Time) will have a shelf life of 21 days. Hope this helps.

The processing side for extended life products that can go through the channels of distribution without refrigeration you will require sterilization, using an Ultra High Temperature Processing (UHT) System.  In addition to using the correct processing system, it is important to have an "aseptic" filler.  It is very important to maintain product sterility throughout the processing and packaging stages.

The shelf life for dairy products varies depending on the treatment given during processing and on the pH of the product itself. For example, pasteurized products (HTST) can have a shelf life up to max. 30 days and UHT products, up to nine month.
