I just purchased a new ice machine. How do I prevent the accumulation of grease and dust?

The best way to prevent dust accumulation with an ice machine is to regularly inspect and clean the air filters and the drain pipes.

With regard to the air filters, many commercial kitchens with an ice machine will have an employee do a daily inspection (or an inspection every other day).  Once a layer of dust or debris has been found, the employee should gently clean the filter.  If the filter is damaged (whether due to cleaning or otherwise), don't re-install it -- replace it with a new filter. 

Drain pipes, on the other hand, tend to be slower to build up dust and debris.  As a result, you can probably have an employee inspect the drain pipes on a weekly basis (of course, this is just a guideline, and if debris is building up faster, do setup more frequent inspections).
