I use aluminum steel pans in my bakery. I’ve heard that the life of these pans can be affected by how they’re cleaned. What can I do to maintain them properly?

For pan cleaning generally, you'll want to: allow the pan to cool off thoroughly before cleaning begins (so as to prevent any warping of the material), avoid bleach, disinfectants, and highly acidic ingredients, and avoid salt contact.  Also, when cleaning, you'll want to make sure not to put your pans in the dishwasher - putting pans in the dishwasher shortens their effective lifespan.  Just use soapy water to clean, and perhaps some detergent.

With aluminum specifically, if you do use detergent, you'll want to ensure that you use a detergent that is compatible with aluminum.  It is a relatively soft metal and can be warped and damaged by incompatible detergents.
