If there is one thing to focus on when first getting started in the food truck business, what would you recommend?

Great question!  Industry chatter seems to be oriented around picking and choosing the right events.  In the beginning, your food truck will have very little name recognition.  To build up your brand (and a loyal customer-base), you should setup at an event.  Do keep in mind, however, that events frequently require that food trucks pay fees (several hundreds of dollars per day) and may also require a cut of all revenue made while on-premises.  Though these are quite demanding requirements, the visibility could really boost your business early on.
