A good hop to add a citrus zest is Gargoyle, a California cluster.  It is indigenous to California and holds citrus and floral aromas.

Citrus zest is a popular way to add flavor to your brews, with orange and lemons being very popular flavors. There are a number of online sources for you to obtain zest in bulk, but the best method for trying out some experimental batches may just be creating it yourself.

The three commons ways of obtaining zest are grating, peeling, and microplaning. These methods are performed in the exact same way as you would take the skin off any other fruit or vegetable. Additionally, it is beneficial to use smaller bits as often as possible, so using a processor or blender would be able to yield small enough pieces.

Are there any brewers out there who zest their own citrus? Does anyone prefer to just stick with extracts?
