To make a fruit-infused beer, youâ??ll want to add fruit to the secondary fermentation.  Generally speaking, adding fruit during secondary fermentation imparts more flavor to the beer.  Another important consideration to keep in mind with fruit infusions is contamination.  Contamination is always a real risk when working with fruit beer.  Many brewers like to minimize the risk of contamination by freezing the fruit and then thawing it in the fridge before adding to the secondary fermentation (alternatively, you can boil the beer, though you risk losing out on some flavor by doing so).  Another option â?? if you have the equipment â?? is to use a dehydrator to kill off any bugs that have escaped notice from washing.
