I'm thinking of bottling my kombucha in amber glass growlers. Has anyone heard of this being done before? I wanna make sure I'm not doing something totally out of the ordinary here.

Absolutely, kombucha (along with cold-brew coffee and beer) is one of the most common beverages bottled in growlers.  Typically, we see kombucha producers bottling in 32oz "growlettes" (a.k.a. Boston round 32oz bottles), although you can feel free to bottle your kombucha in any growler.
