It really depends.  Planetary mixers are so popular because of their versatility.  The availability of a wide variety of interchangeable agitator attachments allows planetary mixers to mix everything from thick, stiff doughs (such as pizza dough) to light, airy doughs, and they can be outfitted to slice, cut, grate, and more.  

Spiral mixers are great for mixing large amounts of dough, and specifically, thick, stiff dough such as pizza dough, as they have higher horsepower motors and more space than most planetary mixers.  Unfortunately, they suffer from a lack of versatility as they typically lack agitator attachments.

Your decision will therefore depend on whether you need the versatility of a planetary mixer, or the power of a spiral mixer.  If your pizzeria focuses solely on pizza, then a spiral mixer is perhaps the better choice, as you won't make much use of the versatile attachments of the planetary mixer.  On the other hand, if your pizzeria serves a variety of other dishes besides pizza, the interchangeable attachments available to the planetary mixer may be more attractive.
