There is not usually a "big" difference in the effectiveness of electric and handheld knife sharpeners, though the effectiveness of a manual handheld knife sharpener does depend somewhat on the speed, skill, and confidence of the user.  Do keep in mind, however, that manual handheld sharpeners frequently limit how much the user can "mess up" by providing angle guides, and the slot system for sharpening does also limit user mistake.  Electric sharpeners similarly have angle guides and a slot system, but they the automated sharpening makes it even faster.  Electric sharpeners are thus faster and even easier-to-use than manual handheld sharpeners, yes, but they're also more expensive, and for some small businesses the expense may be prohibitive, so if you can operate a manual handheld sharpener comfortably, that is probably the better choice (unless there is a serious need for faster sharpening or budget isn't limited).  Handheld sharpeners are often more portable too, so if your business is mobile than it gains a further advantage besides the lower cost (though there are portable electric sharpeners available).
