Just got a new fryer. Anything I should know that’s not common knowledge?

This is somewhat common knowledge - or at least it should be - but unfortunately many businesses with fryers seem to forget to do this, leading to dirty fryer oil and odd flavors in the food: every day, when draining the fryer oil, always inspect the filter and filtration bin.  The filter paper should be replaced with a new, clean one if it is dirty, and the filtration bin should be cleaned.
