I currently use coffee beans but would like to use real chocolate (or cocoa extract or powder) - what would work best?

I am a home-brewer also and we made a chocolate stout with coffee and cocoa-nibs. These were suspended in keg during conditioning phase in a hop-bag for a few days (similar to dry-hopping). We learnt that adding brewed coffee may not be best thing as it may add a "green pepper" flavor to resulting beer.Add comment
Most of the people I know who are making chocolate stouts using actual chocolate use roasted cocoa nibs and/or cocoa powder. You do have to be careful as these both contain a fair amount of fat. A search of brewing forums will give you some ideas for recipes.Add comment
