For my restaurant, is it worth investing in a vacuum sealer versus just using ziplock or tupperware?

It really depends on your storage needs.  Vacuum sealing is very useful because it allows you to store food for many times longer than ziploc or tupperware (10+ days).  Further, vacuum sealing generally allows you to maximize use of space in your fridge and freezer.  Finally, vacuum sealing helps with marinading meat by speeding up the process so that it doesn't have to be left overnight to marinate.
