This is mostly a preference thing.  One of the key questions you'll have to ask yourself is first whether you want electric.  Electric is fine but you'll have to ensure that you have access to an electrical outlet near your omelette station.

As far as induction vs. hot plate, induction plates tend to be a bit more expensive than equivalent hot plate hardware, but they also heat up faster and reach a higher heat on average.  Further, induction plates require specialized pans (the cookware must be induction-ready and flat-bottomed).  If you do not have this equipment already, induction plates may not make sense for you.  Hot plates are less expensive and easier to get off the ground seeing as how specialized equipment is not necessary.  Unfortunately they take longer to heat and tend not to be as energy efficient.
