Is plastic brewing equipment okay to use?

Hello 
Plastic is not recommended and it can leach into the wine. Oak is perfect, but a less expensive way to go would be glass Carboys and ad your Oak wood into that.

Unlike glass or metal, plastic is an absorbent material. When plastic pieces of brewing equipment come into contact with beer wort, some of the beer will inevitably permeate into any openings that might exist. Over time, these plastic parts may begin harboring certain bacteria. Since sanitizing is often more difficult with plastic, any beer wort that touches these parts will then become contaminated.

That being said, most plastic parts are cheap enough to replace often. Pieces like siphon tubing, for example, should be swapped-out frequently, while harder pieces such as plastic fermenter buckets can usually last for a bit longer. 

Regardless, you'll want to closely monitor all plastic brewing equipment (odors are generally the best way to gauge bacteria-related issues), and be sure to replace any parts that show signs of bacteria and/or contamination immediately.
