Should I be concerned about "sediment zones"?

Yes and No.  Yes because the sentiment zone prevents oil from going "bad".

A more important issue is how often you are filtering your oil.  This is one thing that determines food quality and oil life.  I encourage all of my customers to get a fryer with a built in filtration system. They are more expensive initially however you will make back the money in oil cost savings within a year.

Yes, generally you should try to purchase a fryer with a sediment zone that is wide enough to capture any stray food.  Sediment zones are basically areas of the fryer where the oil temperature is lower so that any stray food that falls to the bottom doesn't over-fry (and thus ruin the oil flavor).  Wide sediment zones do make it more difficult to clean the fryer, but the advantages definitely outweigh the negatives.
