Deep fryers can be heated with gas or electricity, depending on the model (both are available for purchase). Gas-powered fryers use burners, whereas electric-powered fryers have burners encased in tubes that are lodged within the fry pot.

Gas advantages:
- Can be fueled with either natural gas or propane.
- Heat up more quickly than electric models, and to a higher cooking temperature
- Generally less expensive to heat (by using gas or propane) 	

Electric advantages:
- More mobile, as they aren't connected to a gas line.
- Lose less heat than gas because heating elements are immersed in oil
- Fast recovery time between frying cycles

Depends what is cheaper in your area ... gas or electric?  Also ask your locality, you might need different hoods for gas vs. electric fryers and that will affect the total cost of your operation.
