Should I hot press my pizza or hand-toss it?

This is really up to individual preference; there are advantages to both hot pressing and hand tossing pizza, but it depends largely on the sort of pizza that you are making. The air flow from spinning dough with your hand, and the gentle nature of hand tossing a pizza, makes it possible to create a light, airy crust.  The crust will also have a more tender bite-feel.  Hot pressing, on the other hand, is great for creating somewhat crispier crusts (especially when using hot presses with a heated top and bottom).  Hot pressing is generally a faster process as well if you are making thicker pizza, since the dough can be pressed into the pan and the heat will speed up the rising process.  

Ultimately, the type of pizza you want to create should determine which method you use.
