Should I offer a light roast at my restaurant?

Unfortunately, it really depends. If you feel that there is a latent demand for a more acidic, less heavy roast, then it is certainly an option to consider. It is worth noting, also, for the sake of branding your light roast, that light roasts actually have more caffeine content than darker roasts (there is a common misconception that darker roasts are more caffeinated). You may want to indicate this higher caffeine content to customers, which may help sell light roast coffee if you choose to introduce it.
