There are many different oak powders, chips, and blocks for sale. How do I decide what to buy?

As a general rule, larger oak products such as barrel inserts and staves are meant for the aging process, while smaller products such as powders, smaller chips, etc. are meant for the fermentation process.  Larger products such as inserts and staves have slower extraction rates but have a flavor profile with a lot of depth, and so are generally better for use in the aging process.  Of course, these are just general guidelines.  Some wineries use staves and blocks in fermentation with good results, for example.
