On the topic of carbonation, how do commercial breweries accomplish this? Do they wait for days for a batch to become carbonated? Seems like an awfully long time to wait for a beer to carb up...

Yes, they do. Carbonating in a bright tank with 15 psi of CO2 can take about 12-14 days. That being said, if the tanks are kept in almost freezing temperatures and the psi is slightly higher, the carbonation process can take less time.
